yellowcake.

large mug.


1/4? c water? enough water to make it resemble boxed mix, properly turned to batter.
1 egg yolk + a bit of white
1/4 c plain white sugar
3/8 c self-rising flour
1/5 T melted butter
1/4? t vanilla - the last in my bottle of vanilla
pinch of salt

melt butter

mix egg yolk, sugar, vanilla.

add in butter while still mixing to temper the egg mixture. mix in water.

mix in flour; beat with a whisk until smooth

microwave 50-90 seconds, turn out onto a plate.

This was more cakelike - the crumb was very large, and the cake itself was very light and puffy. Dry, though: I'm thinking I want to do one of these with honey or molasses, and possible heavy cream or extra butter for the moistening agent?

Basically it was quite dry but that might've been from overnuking.

HOWEVER! the lack of egg white impacted the final texture positively: it really is the evaporating water that makes the cake rise, not the egg white, which always makes the stupid thing unappealingly chewy.


SOON my air conditioner will be out of my window and I will be able to use my oven to make things like cake.
